- ½ cup banana cream instant pudding mix
- 1 teaspoon pure vanilla extract
- 5 cups crispy rice cereal
- ½ cup crushed vanilla wafer cookies
- Extra vanilla wafers for topping
- Optional: melted white chocolate for drizzling
Instructions
- Start with the base: In a large saucepan, melt the butter slowly over low heat.
- Create the banana magic: Once the butter is fully melted, toss in the marshmallows and banana pudding mix. Stir frequently until everything is smooth and melted into a thick, creamy mixture.
- Add that vanilla goodness: Take the pot off the heat and stir in the vanilla extract.
- Fold in the crunch: Add the crispy rice cereal gradually—half at a time works best for even coating. Stir until each piece is covered in the gooey mixture.
- Mix in some cookie texture: Gently stir in the crushed vanilla wafers for that iconic banana pudding flavor.
- Shape and press: Transfer the mix to a parchment-lined 9×9-inch baking dish. Press it down gently to form an even layer.
- Top it off: Press a few whole vanilla wafers on top for decoration and extra crunch.
- Let it chill: Allow the bars to cool and set at room temperature for at least 30 minutes.
- Optional glam: Want to get fancy? Drizzle melted white chocolate across the top once they’ve cooled.
