Nothing says summer like a warm slice of peach cake—especially one drizzled with homemade caramel frosting. This easy, juicy peach dessert starts with a yellow cake mix (yes, we’re keeping it simple!) and finishes with a brown sugar glaze that firms into a candy-like topping. It’s fruity, buttery, and impossible to resist.
Ingredients
For the Cake:
- 1 box yellow cake mix (about 15 oz — Duncan Hines is my fave)
- 3 large eggs (or however many your cake mix calls for)
- 1/3 cup neutral oil (like vegetable or canola)
- 1/2 cup peach nectar or juice
- About 1 pound of fresh peaches, peeled and chopped (roughly 3–4 medium)
- Optional: a drop of orange food coloring for that golden peachy hue
For the Brown Sugar Icing:
- 1/2 cup unsalted butter (cut into chunks)
- 1/2 cup heavy cream
- 1 cup packed brown sugar
- 1 tsp vanilla extract
- 2 1/2 cups powdered sugar, sifted to avoid lumps
Instructions
- Preheat your oven to 350°F and lightly grease a 9×13-inch baking pan (nonstick spray works fine).
- In a large bowl, mix together the cake mix, eggs, oil, and peach nectar until smooth. Add a drop of orange food coloring if you want that extra sunny look.
- Gently fold in the chopped peaches with a spatula, making sure they’re evenly distributed through the batter.
- Pour the batter into your prepared pan and spread it out evenly. Bake for about 28–30 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs (no wet batter).
- While the cake bakes, start the frosting: In a medium saucepan over medium heat, combine the butter, cream, and brown sugar. Stir constantly as it comes to a gentle boil.
- Once bubbling, remove from the heat and stir in the vanilla and sifted powdered sugar. Whisk until smooth and lump-free—return it to low heat briefly if needed to help dissolve everything.
- Pour the warm frosting over the cake immediately after it comes out of the oven. Try to cover the surface evenly in one pass—the icing firms up fast and won’t spread easily once it sets.
