Description

These luscious little confections began as a clever way to transform extra frosting into a show-stopping snack. Now, they’re your go-to anytime you crave something sweet and simple!

Ingredients

Scale
  • ¾ cup unsalted butter, softened
  • 2 teaspoons pure vanilla extract
  • 4 cups confectioners’ sugar
  • 3 tablespoons milk (dairy or non-dairy)
  • 16 oz dark chocolate melting wafers (I like Ghirardelli)
  • Festive sprinkles, for finishing

Instructions

  1. Whip the Filling: In a large bowl, combine the softened butter, vanilla extract, and powdered sugar. Beat on medium speed until the mixture is silky and lump-free, about 2–3 minutes. Pour in the milk and continue mixing until the frosting feels light and airy.
  2. Chill & Shape: Cover the bowl and pop it into the fridge for at least 60 minutes (longer is fine!). Once firm, use a 1-tablespoon scoop or a spoon to portion out the mixture onto a parchment-lined tray. Freeze the dollops for roughly 30 minutes.
  3. Perfect the Rounds: Remove the chilled mounds from the freezer and gently roll each between your palms to smooth any rough edges. This step gives you those irresistible, polished spheres.
  4. Dip in Chocolate: Melt your wafers following the package directions. Hold each truffle on a toothpick or dipping fork, submerge it in the warm chocolate, then tap off drips against the bowl’s side. Place the coated truffles back onto parchment and immediately sprinkle with decorating sugars or nonpareils.
  5. Set & Serve: Let the chocolate shell harden at room temperature, or speed things up in the fridge. Once set, transfer to an airtight container.

Pro Tips

  • A metal cookie scoop ensures every bite is uniform and sets evenly.
  • Tapping off excess coating gives you a sleek, crack-free finish.
  • Swap in milk or white melting wafers for a different flavor profile.
  • Cover the tiny holes from your dipping tool with extra sprinkles or a drizzle of contrasting chocolate.
