For the Cookies

  • ½ cup (115 g) softened butter
  • ¾ cup (165 g) packed light brown sugar
  • 2 tbsp granulated sugar
  • 1 large egg (room temp)
  • 2 tsp vanilla extract
  • 1¼ cups (155 g) all-purpose flour
  • ½ cup (50 g) Dutch-processed cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (90 g) semi-sweet chocolate chips

Mint-Cheesecake Filling

  • 3 tbsp unsalted butter, softened
  • 4 oz (115 g) cream cheese, softened
  • ¼ tsp mint extract (or peppermint, your call)
  • ½ cup (60 g) powdered sugar

Chocolate Ganache

  • ⅓ cup (60 g) semi-sweet chocolate chips
  • 3 tbsp heavy cream


Instructions

  1. Prep & Preheat
    • Heat oven to 350°F.
    • Line a baking sheet with parchment.
  2. Make the Dough
    • Beat butter with both sugars until fluffy.
    • Add egg and vanilla; mix until smooth.
    • Stir in flour, cocoa, baking soda, and salt until no streaks remain.
    • Gently fold in chocolate chips.
  3. Shape & Bake
    • Portion dough into nine ¼-cup scoops; arrange on the sheet with about 2″ between.
    • Press each ball lightly to a 1″-thick disk.
    • Bake 10 minutes, then cool on the pan for 10 minutes before moving to a rack.
  4. Prepare Ganache
    • In a microwave-safe bowl, combine chips and cream.
    • Heat in 30-second bursts, stirring until velvety. Set aside.
  5. Whip the Mint Filling
    • Beat butter and cream cheese until creamy.
    • Add mint extract and powdered sugar; whip until light and airy.
    • Tint with green food gel, a drop at a time, until you love the shade.
  6. Assemble
    • Pipe or spread mint filling onto each cooled cookie.
    • Drizzle with ganache.
