Description
Sink your fork into pillowy gnocchi bathed in a decadent, cheese-forward sauce with tender chicken and a pop of bacon. This one-pan wonder comes together in minutes and steals the comfort-food crown.
Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, cut into bite-size cubes
- 16 oz package fresh or frozen gnocchi
- 8 oz cream cheese, cubed
- 2 cups low-sodium chicken stock
- 4 cups baby spinach, rinsed and dried
- 1 cup sharp cheddar, shredded
- ½ cup crunchy bacon crumbles
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper, to taste
- 1 Tbsp olive oil
Instructions
- Brown the Chicken: Warm olive oil over medium-high heat in a large skillet. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook until the exterior turns golden and the meat is cooked through, about 6–8 minutes. Transfer to a plate.
- Build the Sauce: Reduce heat to medium. Add cream cheese and chicken stock to the skillet. Whisk gently until the cheese melts and the liquid forms a smooth, creamy base.
- Cook the Gnocchi: Stir in the gnocchi, ensuring each piece is coated in the sauce. Scatter the spinach on top, cover, and let simmer for 5–7 minutes, or until the gnocchi softens and the greens wilt.
- Finish & Serve: Return the chicken to the pan. Sprinkle in the shredded cheddar and bacon crumbles. Stir until the cheese melts into gooey ribbons. Taste and adjust seasoning.
- Plate It Up: Spoon generous portions into bowls, garnish with extra bacon or herbs if you like, and serve immediately for maximum comfort.
Notes
Tip: For a lighter twist, swap half the cream cheese for plain Greek yogurt. For added heat, stir in a pinch of red pepper flakes when making the sauce.
