Base Layer
- ¼ cup (¼ stick) unsalted butter
- 8 cups mini marshmallows
- 1 Tbsp unsweetened cocoa powder
- ½ cup semisweet chocolate chips
- 6 cups crisp rice cereal (plain or chocolate-flavored)
- ½ tsp fine sea salt
Truffle Glaze
- 1½ cups heavy cream (10% works, but richer cream is fine)
- 3½ cups quality semisweet chocolate (chips or chopped bar; dark or milk also work)
Optional Finishes
- Chopped nuts
- Sprinkles or toffee bits
- Crushed pretzels or a dusting of cocoa
Instructions
- Prep Your Pan
- Line a 9×13″ baking dish with foil, then coat lightly with nonstick spray.
- Make the Krispie Base
- In a large microwave-safe bowl, melt the butter and marshmallows together on high for 60 seconds. Stir well, then heat another 30–60 seconds if needed until fully melted.
- Stir in the cocoa powder and ½ cup chocolate chips until the mixture is silky and uniform. Work swiftly before it starts to set.
- Fold in the rice cereal and salt until every flake is coated.
- Press the mixture firmly into the prepared pan (dampen your hands or a spatula to prevent sticking). Set aside.
- Prepare the Truffle Topping
- In a small saucepan over medium heat, warm the cream just until bubbles form at the edges—do not let it boil.
- Remove from heat and stir in the remaining 3½ cups of chocolate until glossy and lump-free.
- Let the ganache rest for 5–10 minutes to reach a slightly thickened pouring consistency.
- Assemble & Chill
- Pour the cooled truffle ganache evenly over the rice krispie base and smooth with an offset spatula.
- Scatter your choice of nuts, pretzels, sprinkles, or toffee over the top.
- Transfer to the refrigerator and chill until the chocolate layer firms up, about 1–2 hours.
- Serve
- Lift the entire block out on its foil liner, peel away the foil, and slice into squares or bars.
- Store in an airtight container in the fridge for up to one week.
