  • 34 boneless, skinless chicken breasts (≈1.5 lb)
  • 2 cups broccoli florets, trimmed into bite-sized pieces
  • 8 oz pasta (penne or rotini recommended)
  • 2 cups Alfredo sauce (homemade or store-bought)
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Kosher salt and freshly ground black pepper
  • 12 Tbsp olive oil (for cooking chicken)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13″ or similar baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper and garlic powder. Sear the chicken 5–7 minutes per side, until nicely browned and cooked through. Transfer to a cutting board and cut into bite-sized pieces.
  3. Meanwhile, bring a large pot of salted water to a boil. Cook the pasta until just al dente according to package directions. Drain and set aside.
  4. In a large mixing bowl, combine the cooked pasta, broccoli florets, chopped chicken, and Alfredo sauce. Stir until everything is evenly coated. Taste and adjust seasoning with salt and pepper as needed.
  5. Pour the mixture into the prepared baking dish, spreading it into an even layer. Sprinkle the grated Parmesan over the top.
  6. Bake uncovered for 25–30 minutes, until the casserole is hot and bubbling and the cheese turns golden brown.
  7. Let rest for 5 minutes before serving so it firms up slightly. Serve warm.
