Description

These individual peach cobblers pack a punch of summertime sweetness in every bite—perfect when you crave dessert for two without any waste. Use fresh, frozen, or even canned peaches to whip up this easy treat!

Peach Filling

  • 2 cups sliced peaches (fresh or frozen), thawed if needed
  • 2 Tbsp light brown sugar
  • ½ Tbsp cornstarch
  • ½ tsp pure vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp fine sea salt

Crumble Topping

  • 2 Tbsp butter, cold and cubed
  • 2 Tbsp granulated sugar
  • 4 Tbsp all-purpose flour
  • ⅛ tsp sea salt
  • ½ tsp cinnamon


Instructions

  1. Heat the Peaches
    • Preheat oven to 400°F.
    • In a saucepan over medium, combine peaches, brown sugar, cornstarch, vanilla, cinnamon, and salt.
    • Stir as it simmers; once you see bubbles, turn the heat to low and cook about 10–15 minutes until the peaches soften and the liquid thickens.
  2. Make the Crumble
    • While the fruit cooks, place the cold butter, white sugar, flour, salt, and cinnamon in a bowl.
    • Use a pastry cutter (or your fingertips) to work the butter into the dry ingredients until the mix resembles coarse crumbs.
  3. Assemble & Bake
    • Divide the warm peach mixture between two 7-oz. ramekins, filling each about three-quarters full.
    • Sprinkle the crumble topping evenly over each.
    • Put the ramekins on a baking sheet and bake 15–20 minutes, until the topping turns golden and the fruit is bubbling.
  4. Cool & Serve
    • Let the cobbler cups rest for a few minutes before digging in. Serve warm, perhaps with a scoop of vanilla ice cream or dollop of whipped cream!
