Ingredients
Scale
Peach Filling
- 2 cups sliced peaches (fresh or frozen), thawed if needed
- 2 Tbsp light brown sugar
- ½ Tbsp cornstarch
- ½ tsp pure vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp fine sea salt
Crumble Topping
- 2 Tbsp butter, cold and cubed
- 2 Tbsp granulated sugar
- 4 Tbsp all-purpose flour
- ⅛ tsp sea salt
- ½ tsp cinnamon
Instructions
- Heat the Peaches
- Preheat oven to 400°F.
- In a saucepan over medium, combine peaches, brown sugar, cornstarch, vanilla, cinnamon, and salt.
- Stir as it simmers; once you see bubbles, turn the heat to low and cook about 10–15 minutes until the peaches soften and the liquid thickens.
- Make the Crumble
- While the fruit cooks, place the cold butter, white sugar, flour, salt, and cinnamon in a bowl.
- Use a pastry cutter (or your fingertips) to work the butter into the dry ingredients until the mix resembles coarse crumbs.
- Assemble & Bake
- Divide the warm peach mixture between two 7-oz. ramekins, filling each about three-quarters full.
- Sprinkle the crumble topping evenly over each.
- Put the ramekins on a baking sheet and bake 15–20 minutes, until the topping turns golden and the fruit is bubbling.
- Cool & Serve
- Let the cobbler cups rest for a few minutes before digging in. Serve warm, perhaps with a scoop of vanilla ice cream or dollop of whipped cream!
