Description

Maple Bacon Cheddar Biscuits that are tender inside, flaky outside, and loaded with savory bacon, sharp cheese, and a hint of sweet maple.


Ingredients

  • 8 slices bacon, cut into small pieces
  • 4 cups all-purpose flour
  • 1 cup finely shredded extra-sharp cheddar
  • 4 tsp baking powder
  • 1½ tsp kosher salt
  • 1 tsp baking soda
  • ¾ cup cold unsalted butter
  • 1½ cups buttermilk
  • 6 tbsp pure maple syrup, divided
  • 2 tbsp melted butter


Instructions

  1. Cook the Bacon: Preheat your oven to 450°F and line a sheet pan with parchment. In a skillet over medium heat, fry the bacon bits until crisp, about 6–8 minutes. Drain on paper towels.
  2. Mix the Dry Ingredients: In a large bowl, stir together the flour, cheddar, baking powder, baking soda, and salt. Toss in the cooked bacon.
  3. Incorporate the Butter: Grate the frozen butter directly into the flour mix (or cut it into small cubes). Use a pastry cutter or your fingers to blend until the mixture resembles coarse peas.
  4. Bring the Dough Together: In a separate bowl, whisk the buttermilk with 4 tablespoons of maple syrup. Pour into the dry mix and gently fold with a spatula until a rough dough forms—avoid overworking.
  5. Shape the Biscuits: Turn the dough onto a lightly floured surface and pat it into a 1¼-inch–thick rectangle. Use a 2–2½-inch round cutter to stamp out 12 biscuits, pressing straight down without twisting. Arrange them on your prepared pan, then freeze for 15 minutes (this helps them rise evenly).
  6. Bake: Slide the chilled biscuits into the hot oven and bake 15–18 minutes, until puffed and golden.
  7. Finish with Maple Butter: While the biscuits bake, stir the remaining 2 tablespoons of maple syrup into the melted butter. As soon as the biscuits come out of the oven, brush them generously with this sweet glaze.
