Thin slices of roast beef get cozy with a zippy cream cheese–horseradish spread, all tucked into soft flour tortillas. Slice them up, and you’ve got instant crowd-pleasing finger food.

 


Ingredients

2 large flour tortillas (wrap or burrito size)

8 oz thinly sliced roast beef (deli-style works great)

4 oz cream cheese, softened

⅓ cup Monterey Jack cheese, shredded (mozzarella is a fine swap)

1 Tbsp prepared horseradish (skip the creamy version for maximum flavor)

½ tsp dried thyme (or swap in rosemary)

¼ tsp garlic powder

¼ tsp salt


Instructions

  1. Whip up the spread.
    • In a medium bowl, stir together the cream cheese, shredded Monterey Jack, horseradish, thyme, garlic powder, and salt until smooth and well blended.
  2. Spread it out.
    • Lay your tortillas flat and evenly coat each one with the cheese mixture. I usually stop about an inch from the short edges — those bits will get trimmed off later anyway.
  3. Add the beef.
    • Layer the roast beef slices evenly over the cheesy base.
  4. Roll it up.
    • Starting from one edge, roll the tortilla snugly into a log. Keep it firm but don’t squeeze — you don’t want the filling shooting out the sides.
  5. Chill for clean cuts.
    • Pop the rolled tortillas into the freezer for about 10 minutes (or the fridge if you’re prepping ahead). Chilling helps everything firm up, so slicing is neat and tidy.
  6. Slice and serve.
    • Using a serrated knife, cut each log into ½-inch rounds. Toss the uneven end pieces… or, let’s be honest, eat them yourself. Serve immediately and watch them disappear.

Notes

Tips & Variations

  • Regular-sized tortillas will work, but you’ll end up with fewer pinwheels — you may need extra tortillas to use up all the filling.
  • If you only have creamy horseradish, add a little extra to keep the flavor bold.
  • Make them ahead: assemble and roll the day before, then slice just before serving for the freshest look.
