Crunchy Graham Base

  • 9 sheets graham crackers (about 5½ oz), finely crushed
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

Soft Sugar Cookie Layer

  • 1¼ cups (160 g) all-purpose flour, spooned and leveled
  • ¼ tsp salt
  • ¼ tsp baking powder
  • ¾ cup (150 g) granulated sugar
  • ½ cup (113 g) unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract

Toppings

  • 1 cup milk chocolate chips
  • 1 cup mini marshmallows
  • ¾ cup sweetened condensed milk


Instructions

  1. Prep & Crust
    • Heat oven to 350°F and grease a 9×13″ pan.
    • In a bowl, stir together the graham crumbs, melted butter, and sugar until everything is evenly moistened. Press this mixture firmly into the bottom of the pan to form your crunchy base.
  2. Make the Cookie Dough
    • Whisk the flour, salt, and baking powder in a small bowl.
    • In a larger bowl, beat the softened butter and sugar for about 2 minutes until light and fluffy. Mix in the egg and vanilla until smooth. Incorporate the flour blend just until the dough comes together.
  3. Assemble Layers
    • Gently pinch off bits of the cookie dough, flatten each into a small patty, and place them side-by-side over the graham crust. Don’t worry about covering every inch—the gaps will disappear under the toppings.
    • Sprinkle the chocolate chips and mini marshmallows in an even layer on top of the cookie dough. Finally, pour the sweetened condensed milk over everything, making sure to coat the toppings.
  4. Bake & Cool
    • Bake for 22–27 minutes, until the edges turn golden.
    • Let the bars cool completely—overnight is best for neat squares, but you can also dive in with a fork once they’re just warm.
