  • 2 tablespoons milk
  • Neutral oil (canola or peanut), for frying
  • ⅓ cup sweet chili sauce
  • Julienne-cut carrot strips, for topping
  • Fresh cilantro leaves, chopped, for garnish
  • Toasted sesame seeds, for garnish


Instructions

  1. Prep the Oil & Chicken
    • Pour about 1–2 inches of oil into a heavy skillet. Heat over medium until it reaches 350°F (use a kitchen thermometer to be sure). Meanwhile, trim and cube your chicken breast into bite-sized pieces.
  2. Set Up Your Breading Station
    • In Plate A, whisk together the flour, garlic powder, and a pinch of salt and pepper.
    • In Plate B, beat the egg with milk, plus a dash of salt and pepper.
  3. Bread the Chicken
    • Working one piece at a time, dredge each chicken chunk in the flour mixture, then dip into the egg wash, and return it to the flour mix—this double-dip gives extra crunch.
  4. Fry to Golden Perfection
    • Carefully lower the coated chicken into the hot oil. Fry in batches for about 3–4 minutes per side, until they’re deeply golden and cooked through. Use a slotted spoon to transfer the nuggets to a paper towel–lined plate; sprinkle with a little sea salt.
