Instructions
- Bake the Cake Layers
- Heat oven to 350°F. Grease and line two 9″ round cake pans with parchment.
- In a big bowl, whisk together sugar, flour, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Beat on medium for 2 minutes until smooth.
- Stir in hot water until batter is uniform.
- Split batter between the pans and bake 30–35 minutes, until a toothpick comes out clean.
- Let cakes rest 10 minutes, then invert onto racks (flat‑side up) to cool completely.
- Prepare the Oreo Cheesecake Filling
- Whip the cream to stiff peaks in a chilled bowl.
- In another bowl, beat cream cheese and icing sugar until silky.
- Fold the whipped cream into the cream cheese mixture, then gently stir in the Oreo chunks.
- Make the Ganache
- Warm the cream in a saucepan until it just simmers. Remove from heat, add chopped chocolate, and whisk until glossy.
- If too loose, let sit a minute to thicken—still pourable enough to drip.
- Assemble the Cake
- Place one cake layer on a serving plate. Evenly spread the Oreo cheesecake filling on top.
- Gently position the second cake layer over the filling.
- Pour the ganache over the top, allowing it to cascade down the sides.
- Garnish and Serve
- Sprinkle mini chocolate chips around the top edge.
- Pipe or spoon on whipped cream rosettes for a final flourish.
- Slice and delight in every creamy, crunchy, chocolatey bite!
